Acapulco Chicken

ingredients for 4 (freezable)
2-3 chicken breasts, skinned and cut into large chunks
a little olive or vegetable oil
1 large onion, sliced
2 garlic cloves, crushed
1 teaspoon chilli powder
400g tin chopped tomatoes
400g tin kidney beans
175ml (6fl oz) chicken stock
½ teaspoon dried oregano
freshly ground black pepper

  1. Fry the chicken, onion and garlic in the oil until the meat is a little browned.
  2. Add the chilli powder and stir to coat the meat, allowing the pan heat to release the chilli flavour.
  3. Add the remaining ingredients, and bring to a boil.
  4. Cover and simmer for about 20 minutes.

Serve with rice.
