Slow Cooked Chicken Casserole

For a small 2-portion slow cooker, but actually serves 3-4 with accompaniment
2 large chicken breasts, diced
1 small leek
¼ onion, finely chopped
1 garlic clove, crushed
2-3 med-large carrots, thickly sliced
1 parsnip, sliced
⅔ chicken ‘stock pot’, or other chicken or vegetable stock
good sprinkling of chicken gravy powder
large splash white wine
small splash worcestershire sauce (optional)
good shake of chicken seasoning mixed herbs/spices
enough water to fill crock pot about two-thirds full, with ingredients in place
1 heaped teaspoon cornflour, mixed with cold water

  1. Put everything into slow cooker. Mix well.
  2. Cook on low for ~8 hours, while at work.
  3. Serve with mashed potatoes, or as preferred 🙂
