Makes 4-5 portions:
1 large onion, diced
4-6 medium-large carrots, peeled and diced
2 baking potatoes, or equivalent in smaller varieties
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon (hot) chilli powder
2 stock cubes – suggest vegetable and ham
800ml hot water
celery salt and freshly ground black
- Add all ingredients to the pan.
- Bring to the boil , then cover and simmer for ~25 minutes.
- Blend (with a stick blender if you have one).
My usual ‘bung everything in’ method; if you prefer you can soften the veg first, then get some heat into the spices before adding the liquid.
