ingredients for 4-6 portions
oil/low fat cooking spray
2 large onions, chopped
2 garlic cloves, crushed
1-2 small red chillies, deseeded and chopped (1-1.5 teaspoons chilli powder)
500g/1lb 2oz sweet potatoes, peeled and chopped
500g/1lb 2oz carrots, peeled and chopped
1.2 litres/2 pints vegetable stock
- Fry the onions and garlic until soft and golden.
- Stir in the chillies, then add the sweet potatoes and carrots.
- Cover the ingredients with stock. Cover the pan and bring to the boil, then simmer for 30 minutes or until the veg are tender.
- Liquidise. Add more water/seasoning if necessary.
Alternative: throw everything into the pan and boil for 30 mins!
