Sweet Potato and Chilli

ingredients for 4-6 portions
oil/low fat cooking spray
2 large onions, chopped
2 garlic cloves, crushed
1-2 small red chillies, deseeded and chopped (1-1.5 teaspoons chilli powder)
500g/1lb 2oz sweet potatoes, peeled and chopped
500g/1lb 2oz carrots, peeled and chopped
1.2 litres/2 pints vegetable stock

  1. Fry the onions and garlic until soft and golden.
  2. Stir in the chillies, then add the sweet potatoes and carrots.
  3. Cover the ingredients with stock. Cover the pan and bring to the boil, then simmer for 30 minutes or until the veg are tender.
  4. Liquidise. Add more water/seasoning if necessary.

Alternative: throw everything into the pan and boil for 30 mins!
