Winter Veg and Lentil

Makes 6-8 portions:
200g red lentils
1 ham stock cube
1 vegetable stock cube
freshly ground black pepper

Suggested veg:
1 large onion, diced
1 leek, sliced
2 large carrots, diced
2 parsnips, diced
¼ – ½ turnip (swede), diced
2 medium potatoes, diced

Suggested spices:
celery salt
a little ground cumin
a little chilli powder (enough to hint, rather than flavour)
a little more turmeric, for colour
a little celery salt (in lieu of regular salt)

Method:

  1. Add all ingredients to the pan.
  2. Bring to the boil , then cover and simmer for 30 minutes.
